Soaking is not necessary; add a liter and 1⁄4 of cold water to the product and put on the fire. Bring to a boil, continue cooking over a low heat with the lid on for about fifty minutes, stirring occasionally. Towards the end of cooking add salt and, if required, add more water.
Before serving:
Season on the plate with extra virgin olive oil and add toast.
